Our selection EVOO is made from unharvested olives from the harvest harvested to make our Agouros and Early Harvest oils.

The rest of our harvest takes place at the end of November and the beginning of December, before the fruit falls to the ground to obtain an excellent extra virgin mountain oil, a full-bodied and fruity oil for our kitchens.

It should be noted that this type of extra virgin olive oil, although it is made with more mature olives, does not vary greatly in properties, since the only appreciable difference is the flavor of the oil, which is usually a little milder.
